This was my first night of many and I was surprised at all the changes from my last Vietnam visit a few years back. It's much busier now than I remember, and there are loads more hostess bars too. The beer is insanely cheap at some bars, and a lot of the regular Vietnamese girls were very easy on the eye. My plan was very simple for this night, eat some Pho and then head to drink beer on Bui Vien street... A word of warning about some of the regular bars on Bui Vien street. Trip advisor reviews are littered with incidents of bill padding, incorrect change being given and not honouring promo deals. Be aware of this if you are drinking here and it's probably not a good idea to run up a big bar tab, but best to pay for each drink as they come to avoid potential problems. There seemed to be more hostess bars this time especially down the 'Crazy Girls' end of Bui Vien street. Ladies are available to be barfined (if they like you) but it's much more low key than other nearby countries. This video ends at midnight, and a following part will be released soon... It is a good place to find $0.50 draught beers and many expat teachers congregate here in groups for the inexpensive offerings. The food is generally good here and many restaurants do take away service for the local expats. The hostess bars were quiet on street 172 when I visited so I never ventured in as I generally don't like being a solo customer in a bar. The Apple bar girls were probably the best lookers from what I saw. Sundance Inn and Saloon. This place is pretty solid choice with rooms starting at around $20. It's guest friendly, they have a small swimming pool at the back and a lively bar area that is good to meet fellow travellers if that is your thing. The first $1 beer of the trip was at the Sundance Inn and the $1 tacos there tasted fine (but could have done with some salsa). $1 tuk tuk ride. I went everywhere via tuk tuk or moto taxi and never paid more than $1 for a trip. September is the low season and there are far more tuk tuk drivers than customers so if one won't go for $1 then the next probably will. Phnom Penh is not a place to wander around alone late at night, even around the tourist areas. I don't walk anywhere round these streets at night and always take motorbike taxis or tuk tuks. Street 104 I went too early on this night and didn't realise that the bars really get going from 9pm onwards. It was interesting to see they are building a Hooters franchise restaurant right on Street 104. The tuk tuk guys said they were building a hotel upstairs too. $0.75 beers at the Cheers bar all night long is a very good deal on Street 104. If there was a bit more atmosphere I would have hung around a bit longer but decided to move on... Angry Birds Bar, Street 130 This bar was well run and had a few nice hostess ladies inside. Worth a look if you are nearby. Also, I spotted a tuk tuk on Street 172 that gives free rides direct to the Angry Birds bar, good if you are heading over that way anyway. The Corner 136 bar This hostess bar is probably my favourite in all of Phnom Penh as they have sexy dancing downstairs, a chill out area at the front and an upstairs seating area overlooking the street below. They also have a lot of hostess ladies on their books. My one that I talked to was a very pleasant girl. She hangs around the bar every night drinking with guys so it's inevitable she'll go with a customer soon enough. It wasn't to be for me even though she was lovely, and petite at only 40 kg (I don't usually don't care for girls with a slim build like her). Some guy will get lucky and end up taking her back to the hotel... Sorya Beer Garden This place is popular with local expats and has cheap beer, pool tables and always a few freelancers milling around. I must have picked a bad night to visit as the selection of freelancers wasn't the best putting it mildly. Pontoon This nightclub is now has cover charges some nights due to it's increasing popularity. I think the club is ok, but not great. There was much more security on my visit and they were hassling me a bit for taking a couple of photos which was surprising. Last drink on Street 136 I went for a last drink in a random bar here, turns out that there were 2 Korean guys buying drinks for the whole bar and the night descended into a blurry haze... Ingredients: Level: Difficulty Time: 2 Days Ingredients: Duck 2 cups of vinegar 2 cups of honey 2 cups of water 1 Maltose 2 tbsp sugar 2 tbsp garlic powder 1 tbsp white pepper 1 tbsp five spice powder 1 tbsp ginger powder 1 tbsp salt 4 tbsp hoisin sauce Licorice Star Anise Dried Citrus Peel Cucumber Green Onion Ginger Tortilla wrap (optional) Directions: Pump air underneath the skin through the neck cavity to separate the skin from the fat and the flesh. This process will make the skin very crispy. Cut off the wings and the feet. Then make a incision on the bottom as shown here, remove the innards. Keep the hearts and gizzard, I'm going to make a dish off of them in the future episode. Wash the duck thoroughly. Wash the cavity a few times to remove any residue. Here are the ingredients we are going to put inside the duck. Next, combined the ingredients into the hoisin sauce. Then put the mixture inside the duck's cavity. Put in 1 slice of ginger and one green onion. This will give it an aromatic flavor on the inside. Use a skewer to sew up the cavity. First, hold the skin together then slowly puncture through, then overlap the skin and continue sewing until there is no holes left. Make sure there is nothing leaking out of it. I use a hook to hang the duck, if you don't have one you can just use strings and tied it around it's wings and neck. Next, refrigerate the duck for 24 hrs laying the duck belly side down. Next in a pot add in 2 gallon of water, add Licorice, star anise, and dried citrus peel. This add an aromatic flavor to the skin. Boil for about 15 to 20 min. We are going to make glazing for the duck. In a bowl add 2 cup or ml of honey, 1 tbsp of lemon juice, 2 cup or 473 ml of vinegar and 1 maltose. The maltose is very sticky so we want to make it into a more manageable form. Boil 2 cup of water and add maltose into the hot water. Then mix the maltose with the other ingredients. Next, soaked the duck in boiling water for 15-20 secs. This process quickly tightens the skin back up.Then pour the mixture over the duck one at a time. Hang the duck to dry for a minimum of 5 hrs. use a fan to blow the duck dry until the skin become springy. Preheat the oven to 350F, after you put in the duck turn the temperature to 300F and cook for 40-45 min. Put a drip pan underneath to catch the fat. Turn the duck 180 degree after 20min of cooking, this ensure even cooking and browning of the skin. After the duck is fully cooked, turn the fire off and leave it in the oven for additionally 15 min. This will let the juice be reabsorb into the meat making the meat very juicy and tender. Now, I'm going to show you how to cut the meat. First, locate the sternum, make a cut near the sternum, then make a cut on the side of the duck. Next, cut sideway diagonally. Now it's done, serve it with spring onion, cucumber and hoisin sauce.
